Simple Roasted Potatoes


  • 1 pound fingerling potatoes, washed but not peeled
  • 1/3 cup olive oil
  • 2 teaspoons salt
  • 1/2 teaspoon pepper

Rinse the potatoes in a strainer. Place them in a large stainless (or other) bowl. Sprinkle with salt and ground pepper and toss. Drizzle the olive oil over them and toss again.

Place potatoes into a shallow --oiled-- roasting pan. Roast in a preheated 400 degree oven for 45-60 minutes until the potatoes offer slight resistance to the point of a knife.
