Goat Cheese Stuffed Radicchio

Radicchio can be stuffed with goat cheese and roasted. It's easy and crazy good. Just peel off two or three outside leaves for each diner. Wrap the leaves around a generous dollop of chevre. Place the rolled leaves in a single layer in a glass pan coated with olive oil. Drizzle with more oil, and bake at 350 degrees until the leaves just brown at the edges about 20-30 minutes.
