Frizzled Leeks

ingredients

  • 3 long leeks, rinsed, root intact
  • 4-5 Tbsp olive oil

Trim greens from leeks and slice in half lengthwise.

Leave root intact to make slicing easier. Proceed to slice leeks lengthwise into long, thin strips (the thinner the better). Cut off root when you achieve the thinness desired.

In a large skillet, heat olive oil over medium high heat. Toss in leeks and sauté until leeks are just translucent. Do not overcook, as leeks become mushy and stick together. Separate well and place loosely on cookie sheets. Bake at 325° for 10-15 minutes or until lightly browned and crispy.
