Mashed Potatoes and Leeks with Thyme

ingredients

  • 2 pounds potatoes
  • 1 large leek (use up to the first leaf juncture) washed well, sliced into thin rings
  • 3 tablespoons butter
  • 1 1/2 teaspoons fresh thyme leaves, minced
  • 1/2 cup milk
  • 1/4 cup heavy cream
  • Salt & pepper

Scrub and slice potatoes into small wedges. Steam until just tender, about 10 minutes. While potatoes are cooking, in a heavy skillet cook leeks in 3 tablespoons butter over moderately low heat, stirring occasionally, until softened. Stir in thyme and salt and pepper to taste.

In a small saucepan heat milk and cream until mixture just comes to a boil. Add potatoes to skillet and cook over medium heat briefly. Stir leeks and milk mixture into potatoes, and season with salt and pepper. Serve hot.
